Because we’re keen for everyone to know about the brilliant people behind the New Forest Food and Drink Festival, over the next few weeks and months, we’ll be introducing you to our amazing local chefs who’ll be producing the menus for our headline events.

Classically British and French trained, James Foreman has worked at the prestigious Relais & Chateaux Wedgewood Hotel in Vancouver, as well as Holbrook House in Somerset and the contemporary kitchens of Cotswold House in Chipping Campden, where he was awarded a Michelin Rising Star and three AA Rosettes.

Now he’s executive chef at Burley Manor restaurant with rooms and will be enthusiastically overseeing the headline event for The Vegetarian Forest Feast theme, which they are holding on Tuesday November 1.

James will be taking his culinary inspiration from the Mediterranean because: “This style of cooking allows us to create exciting new vegetarian dishes you’ll love! I hope people will love it so much they may become and accidental vegetarian themselves.”

All James’ signature dishes use seasonal ingredients from the New Forest and across the British Isles and many are cooked in his ‘secret weapon’, the wood-fired, stone-bake oven which is at the heart of the entire Burley menu.
