Because we’re keen for everyone to know about the brilliant people behind the New Forest Food and Drink Festival, over the next few weeks and months, we’ll be introducing you to our amazing local chefs who’ll be producing the menus for our headline events.
Over at Rhinefield House, which is hosting a New Forest Brunch to headline our New Forest Breakfast & Brunch theme, Head Chef Byron Hayter has organised a selection of New Forest artisan jams, breads, local cheese, cold meats, yogurts and fruit juice, followed by a cooked to order New Forest breakfast with all produce locally sourced.
The November 5 event will showcase the finest New Forest produce, as well as the talents of Byron and his kitchen team.
Byron started his career in Sandbanks, Dorset, not far from his home town of Sherborne and still cites baking cakes in his granny’s kitchen as one of his main culinary influences, along with watching Ready Steady Cook in the afternoons. “I was always amazed at what could be achieved from one little bag,” he says.
Competing in the BBC’s Masterchef, becoming a semi-finalist in the UK Chef of the Year Award and being a Gold Award winner in the Senior Chef of the Year competition in the Channel Islands are all things he’s proud of.
But he’d still like to top it all off by cooking for his food hero, Raymond Blanc. In the meantime, Byron scours the local area for the best possible produce from farmers and suppliers.
